Nebraska uses a saison yeast blend and German Tettnang and Hallertau Blanc hops to give this beer both citrus and earthy qualities. |Big No No||Baltic Porter Robust &Roasty||8.5%|
Influenced heavily by porters brewed in England, Baltic porters are developed in the northern European baltic states. Brewed with lager yeasts and typically push toward a higher strength of alcohol. Big No No is a beer developed by our brewer Grant. It has a clean and balanced chocolate and roast character with dark fruit and coffee notes. Its higher alcohol is well hidden and dangerous. |Beer Spaceship 344||American Pale Ale with HBC 344 hops||4.8%|
Blast off!! Basically, the idea for this beer was to leave this planet. Ha! In order to do this we used the base beer for Beer Spaceship (our American Pale Ale), but used exclusively experimental hop HBC 344. This hops imparts great floral, citrus, and eucalyptus qualities. If you didn’t already know, we like making beers that are sessionable. We wanted this beer to be under 5% and to feature HBC 344 in all it’s orange and floral goodness. With the low ABV we knew we needed a malt bill to fill out the body so the beer wasn’t too thin. The oats and carapils help give body and a nice subtle raw graininess to the beer. |Throwback||Pale Ale from the 90's||5.5%|
We drew inspiration for this beer from earlier memories of drinking craft beer in the Pacific Northwest. Slightly fuller bodied with a tad more malt character and yet still a nice hop presence. Basically, more balance to the beer. Though the caramel malt sets a nice base for the beer, the hops are still very fresh and in the forefront. For Throwback we used Cascade which impart some nice citrus, Pine and floral notes.More info on Untappd
|For Crazy||Hazy IPA with Caffeine||9.1%|
The brainchild of our brewer Grant Scholler, For Crazy combines the intensity of 4+ pounds per bbl of dry hopping with pure caffeine. Each 12oz pour has the equivalent of a half cup of coffee (no actual coffee though). This one should be fun:) For Crazy has a soft, round mouthfeel with a hint of warming alcohol from the 9.1% alc. Motueka, Mosaic, and Amarillo hops explode out of the glass with aromas of citrus, melon, and tropical fruits. Enjoy!More info on Untappd
|Timbo Pils||West Coast Hoppy Pilsner||5.8%|
We took inspiration from both German Pilsners and West Coast IPAs for Timbo Pils. We used more German influenced hops in the kettle (Czech Saaz, Opal, and Saphir) which gives the beer a softer bitterness and a nice floral and earthy hop base. We then used Mosaic and Motueka for dry hopping to bring out the tropical west coast flavors of mango, riesling grapes, and passionfruit. 5.8% abvMore info on Untappd
|Whoops||Hazy West Coast IPA||6.7%|
For Whoops we got a chance to experiment with a new hop we had never brewed with before, Eureka. The hop gives off a bigger dank and herbal quality with hints of dark fruits. We countered some of those more savory notes with the tropical intensity of Citra. We built a light flavored, but protein heavy malt bill to give the beer a nice mouthfeel to accent the hops. This beer is a celebration of us brewing beer for one year! We used every strain of yeast taking up residence in our festive little brewery. It was fermented in oversized (132 gallon) french oak puncheon barrels that previously held red wine. It is dry and citrusy with a pleasant brettanomyces earthiness and a peppery, crisp finish.More info on Untappd

This pale beer is crisp, light bodied, and incredibly drinkable. We use an ale yeast at low temps and Noble hops that give this beer Pilsner like qualities, lightness of palate, and fresh floral aromas.

About The Brewery
We’ve chosen to open a brewery because we think it is a pretty awesome world of discovery, adventure, and, quite simply, fun. We have a pretty charismatic approach to making beer in the neighborhood we live. We make the beer in a 7 bbl brewhouse under the same roof as The Hermosillo. We like to experiment with unique processes, wacky microbes, and local ingredients among other things. The brewery is comprised of four partners: Bob Kunz, Ross Stephenson, Michael Blackman and Dustin Lancaster, with Bob primarily guiding the beer along its path. Overall, Highland Park Brewery has a fairly simple goal of making excellent beer and having a good time along the journey.

The Hermosillo is a neighborhood beer and wine bar in Highland Park, Los Angeles. Previously a night club with an infamous reputation, The Hermosillo now serves craft beer, 30 wines by the glass, and creative bar food.
