Influenced heavily by porters brewed in England, Baltic porters developed in the northern European baltic states. Baltic Porters are brewed with lager yeasts and typically push toward a higher strength of alcohol. Big No No is a beer developed by our brewer Grant. We took the base of a classic American pale ale and dry hopped it a little more heavily with Cascade and Centennial hops. The hops give this beer fresh floral and citrus qualities. A simple malt base keeps the beer crisp and drinkable. Beer! Enjoy!More info on Untappd
|Extremely Certified||Hazy IPA||6.6%|
Extremely Certified is our first time using cryo hops. Cryo hops are made by separating the hop oils and resins from the vegetal leaf matter. It is designed to provide intense hop flavor and aroma, enabling brewers to dose large quantities of hops without introducing astringent flavors or vegetative cone material. The Mosaic and Citra we used for dry hopping come through as very fruit driven with killer flavors of mango, papaya, and stone fruit. Enjoy!More info on Untappd
|Hunk||Hazy Double IPA||8.4%|
We used an assertively fruity yeast called Conan (man, that Arnold is such a Hunk) for this beer. It works great in bringing out a crazy fruit melody when used with new school hops. Simcoe, Nelson, J-17, and Hallertau Blanc were used in the dry hopping and contribute huge aromas and flavors that would fit in perfectly with Runts and Sweet Tarts candies. A soft mouthfeel and balanced bitterness complete the overall impression of Hunk. Beer!More info on Untappd

Ah man, we can never have enough Pilsner! This unfiltered Pilsner utilizes Saaz hops and no finings or filtration to leave us with a beer full of great old world hop character and a simple pilsner malt base. Crisp and snappy with a great hop balance allow the earthy, floral, and citrus qualities to shine. Balanced bitterness and a clean flavor profile make this beer immensely drinkable. |Timbo Pils||West Coast Hoppy Pilsner||5.8%|
We took inspiration for this West Coast Hoppy Pilsner from both German Pilsners and West Coast IPAs. We used more German influenced hops in the kettle (Czech Saaz, Opal, and Saphir) which gives the beer a softer bitterness and a nice floral and earthy hop base. We then used Mosaic and Motueka for dry hopping to bring out the tropical west coast flavors of mango, riesling grapes, and passionfruit.

About The Brewery
We’ve chosen to open a brewery because we think it is a pretty awesome world of discovery, adventure, and, quite simply, fun. We have a pretty charismatic approach to making beer in the neighborhood we live. We make the beer in a 7 bbl brewhouse under the same roof as The Hermosillo. We like to experiment with unique processes, wacky microbes, and local ingredients among other things. The brewery is comprised of four partners: Bob Kunz, Ross Stephenson, Michael Blackman and Dustin Lancaster, with Bob primarily guiding the beer along its path. Overall, Highland Park Brewery has a fairly simple goal of making excellent beer and having a good time along the journey.

The Hermosillo is a neighborhood beer and wine bar in Highland Park, Los Angeles. Previously a night club with an infamous reputation, The Hermosillo now serves craft beer, 30 wines by the glass, and creative bar food.
