Fresh Friends: Thiolized Timbo is a 5.8% ABV West Coast Pilsner brewed for Timbo Week to explore the cutting edge of biotransformation. For this special batch, we fermented our iconic flagship recipe with Omega Yeast’s Lunar Crush yeast—a thiolized version of their yeast strain designed to unlock trapped tropical aromas. The goal was full integration: rather than letting the intense thiol character exist in isolation, we’ve woven it seamlessly into Timbo’s classic dry hop. This advanced process results in a bold yet beautifully balanced Pilsner where the biotransformed thiol compounds and hop-derived aromatics amplify one another, pushing the beer’s signature tropical profile to a massive new benchmark.
